jam.jpg Blackberry season.  Knew it would be good:  experienced late rain +  steady moderate heat.  Thus, masses of white blossoms appeared in June.  And in July, the bushes are packed full of fat fat fat succulent berries.

The family and neighbors get out there and pick on a clear quiet day and consume some significant portion. We return to a hot kitchen to combine and concoct vast pots of steaming boiling hot crushed berries, with bags of sugar into the most pungent jam this side of eternity, as well as a succulent pie or 2.  A few recipe modifications must be made, but other than that, all is well.

No rival to Susan Stamberg's famously undying cranberry mayo T-Day relish, the following Yam recipe, seems to be a favorite on both sides of the Aisle -- the laws and in-laws that is.  Or at least, of the combined family offspring (the oldest of whom is 13).  Could it possibly have something to do with the 1-2-3 punch of brown sugar, oj,  and marshmallows?  Perhaps we will stop making this recipe once the younger palates mature.  However, on the positive side, there are so many bust down the doors flavors in this recipe, no one will notice if you miss out on an ingredient or 2.

Yams w /Pecan topping

topping:
3/4 c pecans
15 gingersnaps crushed
1/3 c brown sugar

yams:
3 lbs sweet potatoes
3T oil (for brushing onto yams)
3/4 c half and half
2 T butter
1/2 c orange juice
2 T dark brown sugar
3 T orange marmalade
1 t cinnamon
1 t ground ginger
1 t allspice
1/2 t nutmeg
1/2 t salt
3 eggs

2 T butter cut into pieces
1/2 bag marshmallows (Campfire brand)

WW Banana Bread -- Is what they say true? PDF  | Print |  E-mail

Are we tired of these yet?  Apparently not... Why? because they're good for you, but you can't tell! Well, I'm not claiming the bananas + wholewheat fully counteract the sugar + butter.  

Whole Wheat Banana Bread
2 c mashed ripe bananas
1/2 c white flour
2 1/4 c wheat flour (add 1/4c for extra ripe bananas)

Amish Friendship Bread. Passed on to me. A "chain recipe". A sweet cake-like bread. When you've made your bread, you divide the starter and distribute it to your other friends. Then your friends can make their own and pass it along to their friends. This is why the bread is called "friendship bread". The yeast in the starter gives it flavor, but doesn't provide leavening.  And don't forget the fabulous large box of vanilla pudding!  Perhaps this viral recipe originated at Gen Mills...
